Dan, with an older vid card like that or in fact any vid card, the more memory the better IMHO.

I'd go for the GT. With a card as old as this you are likely to be knocking the graphics options back a tad so you won't really notice the benefit of the extra RAM, and bear in mind that the GT has almost double the memory bandwidth of the GS anyway so the playing field levels out somewhat. And if it's the newer 80nm GT then it's a no-brainer.
Edit : Every comparison I can find on the net just confirms my theories, the 256 GT will outperform the 512 GS any day of the week.

Yes the GT would be the better option this card is more than good enough for FS9 re FSX I do not know??? I found that FSX did not work great on my Geforce 6600GT card but the later 8600GTS card with DDR3 ram worked a treat. Even that is old hat now! But I have not heard great things regarding the 9600/9800 cards due to lousy drivers, but Nvidia have just relased some new drivers so maybe that will improve? I know good 8600GTS cards can be bought cheap and they are damned good value imo
