It does take a little practice mate and ideally, you want a good model to get you into the groove. Some 'carrier' aircraft are a complete nightmare and hardly deserve a carrier tag. Others are rather more friendly such as Rob's Scimitar, Sea Hawk and AEW Gannet. How realistic their flight models are is of no consequence. They fly down to the carrier extremely well, can be kept on and off pwr easily and are not 'flighty' in any way. As important.. the default view lets you see the carrier you're trying to land on.. no excessive AoA. Dino's Tomcat 'D' has nice characteristics though you do need to concentrate a wee bit more. If you're trying with something like the default FA-18.. the odds are stacked against you. It doesn't display the correct 'fly by wire' feel (which in itself is odd!!) and is SO easy to over-correct it's painful!!
Indidentally.. the F-14 should have had a HUD visible. No idea where it went to but as I use shift+z most of the time, I didn't realise until someone pointed it out on another forum
Mike, you could always try Mr. Garwood's beautiful Auster Autocrat. No tailhook or catapult needed. Or you could use a more traditional carrier aircraft and end up like the poor guy in the last pic. But seriously, the Autocrat is a lot of fun to fly from a carrier.
