I'm fairly sure the pursuit cars carry outriggers to put back in once the U2 has stopped, I'm sure I've seen a picture somewhere where they rested it on the back of a pickup but I may be imagining it.
If you think that landing was bad this video http://www.youtube.com/watch?v=eamnTyfkUBY has some of the ones from the flying stage of the U-2 selection interviews. I think the stall may actually be intentional to make sure it gets down.

The cars carry the outriggers and as I mentioned they can if careful/lucky keep it level until they are popped in or they can drop a wing but the outriggers are refitted for taxying.
