Leif (and everyone else of course), I downloaded the demo for that sailing sim, and though you can only play it for a short time, it does look promising.

Also I had a look through their forum and found a movie made by one of the members. Very impressive, and one thing I noticed which is particularly intriguing; you can construct boat interiors. Ever fancied designing your own private yacht ?

As a long-time user of Virtual Sailor, I can only recommend it.
It has come a long way since the early days and Version 7 (beta) does all I need and more.
I use it for sailing mostly and keep away from the ferries, cruise ships, subs etc, that have become available in recent months.
Unlike other sailing simulatiors, VS also lets you explore the depths and I find that a fascinating break from cruising the Med.
There is an excellent forum and any questions are usually answered very quickly.

John, to what extent are the effects of wind, waves and currents modelled ? And on the larger sailing ships, can you manage each individual sail ? Is navigation modelled ? Dynamic weather ?

I don't really know where to start. I think the answer is yes to all your questions.
Have a look at this review. It's an old one, and the latest version is even better, and the "Cons" at the end of the review have all been addressed.

Thanks John. I'm seriously thinking of getting this. I'd really like to have a crack at online multiplayer yacht racing, and from what I can tell, this game is just what I need.
