Firstly confirm you've got the model.cfg set up to look for the right file and it's in the right place etc.
In game check you're actually in the VC view as opposed to the 'looking ahead with no cockpit view' just press A a few times to cycle through all the options.
When you're sure you're in the VC view pan the view around, I frequently find I'm sitting a few/several meters in front of the cockpit so I can't see it in which case the aircraft.cfg needs a little tweeking to reposition things.
That's my top three reasons for the VC not showing up!

Hmmm.......
I'm trying to think of a reason for the VC not showing, if you've exported the model properly which as you've managed the aircraft I'm guessing you have, then I'm guessing it's something to do with the set up. If you want me to try hacking it into an aircraft I'll send you a PM with my e-mail address.
