Apparently they were landing with up to 40 knots crosswind, not something that will happen regularly when in service. Always interesting to see these certification flights though!

Only just found this topic, I think I've been away from this place for awhile! Just a small addition to the fuel dumping issue: an aircraft has to have a fuel dumping system installed if it can not conform to the climb requirements in CS-25.119 and CS-25.121(d) after 15 minutes of flying from a MTOW...
